Easy Recipes to Make for Mom

Where would we be without mothers in this world? They are the seam holding our lives together. I am 23 years old, and I still call my mother on a daily basis—no shame! This means, however, that all you husbands, sons and daughters out there should be planning to make Mother’s Day special for the special woman in your life. Making a meal for mom would be one of the best gifts you could give her! A meal she can enjoy without having to prepare it herself will give you major brownie points, and there are countless quick, simple, kid-friendly (and husband-friendly) meals that she will love!

Here are some great recipe ideas from Hy-Vee to cook for mom as you celebrate Mother’s Day:

Toma Grilled Cheese with Apple and Dijon

Serves 4

All you need:

8 slices of Sara Lee 45-calorie multi-grain bread (or any bread of choice)

4 tbsp Hy-Vee Dijon mustard, divided

1 Pink Lady apple, quartered and sliced

12 ounces Point Reyes Toma cheese, shredded and divided

¼ cup Culinary Tours salted butter, divided

All you do:

  1. Lay 8 slices of bread on a clean work surface. Spread 4 slices of bread with 1 tablespoon mustard each, top with apples and cheese; top with remaining bread slices. Spread softened butter onto the top and bottom of bread slices.
  2. Heat a large nonstick skillet over medium-high heat. Cook sandwiches, two at a time, for 3 minutes or until bottoms are golden brown. Turn and cook 3 minutes more or until cheese is melted and bread is toasted. Serve immediately.

Asian Celery Stir-Fry

Serves 4

All you need:

2 tbsp Gustare Vita olive oil

Hy-Vee salt

Hy-Vee ground black pepper

1 pound boneless skinless chicken breast

1 pkg Hy-Vee Short Cuts stir-fry mix

½ cup Hy-Vee Short Cuts sliced celery

1/3 cup Hy-Vee bottled stir-fry sauce

All you do:

  1. Place olive oil in a medium skillet over medium heat. Season chicken with salt and pepper and add to skillet. Cook 15 to 20 minutes until chicken is no longer pink in center and reaches an internal temperature of 165 degrees. Remove chicken from pan, cover and keep warm. Wipe out skillet with paper towels.
  2. Add stir-fry mix and sliced celery to same skillet, season with salt and pepper. Cook 5 to 7 minutes or until vegetables are crisp-tender.
  3. Slice chicken across the grain into bite-size pieces; add chicken back into skillet and pour stir-fry sauce over vegetables and chicken. Serve immediately.
